    Prepare the Porcini Butter

    Soak the dried porcini mushrooms in hot water for 20 minutes. After soaking, drain and finely chop the mushrooms. In a skillet, melt butter over medium heat. Add the chopped porcini and sauté for about 3-4 minutes until fragrant. Remove from heat and set aside.

    Roast the Oyster Mushrooms

    Preheat your oven to 400°F (200°C). Toss the oyster mushrooms with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes, or until golden and crispy.

    Cook the Rigatoni

    In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Combine the Ingredients

    In the same pot used for the pasta, return the rigatoni and add the porcini butter, roasted oyster mushrooms, chopped parsley, red chili flakes, and a splash of reserved pasta water. Toss everything together, adding more pasta water as needed to create a sauce.

    Serve

    Adjust seasoning with salt and pepper. Serve hot, garnished with additional parsley and chili flakes if desired.
