    Prepare the Beef Tongue

    Place the beef tongue in a large pot of salted water. Bring to a boil, then reduce heat and simmer for about 2-3 hours until tender. Remove from water and let cool. Peel off the outer skin and slice thinly.

    Make Sardine Mayo

    In a bowl, combine the sardine fillets, mayonnaise, and lemon juice. Mash until smooth. Season with salt and pepper to taste.

    Prepare the Baguette

    Preheat the grill. Slice the French baguette into 1-inch thick slices. Brush each slice lightly with olive oil and season with salt and pepper.

    Grill the Bread

    Grill the baguette slices for about 2-3 minutes on each side until golden and crispy. Remove from the grill.

    Spread a generous amount of sardine mayo on each grilled baguette slice. Top with slices of beef tongue, a sprinkle of chopped celery, and garnish with caper berries.
