Method

Preparation of Cheese Grits

    Cook Grits

    In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of grits. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until the grits are thick and creamy.

    Add Milk and Cheese

    Once grits are cooked, stir in 1 cup of milk, 1 cup of shredded cheddar cheese, and 2 tablespoons of butter. Mix well until the cheese is melted and creamy. Season with salt to taste.

Cooking Spicy Sausage

    Cook Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 8 ounces of sliced Andouille sausage and cook until browned and heated through, about 5-7 minutes. Remove sausage from skillet and set aside.

Cooking Shrimp

    Sauté Shrimp

    In the same skillet used for the sausage, add 2 tablespoons of olive oil. Add 3 minced garlic cloves and sauté for about 30 seconds until fragrant. Add 1 pound of shrimp, 2 tablespoons of lemon juice, 1 tablespoon Cajun seasoning, and season with salt and black pepper to taste. Cook until shrimp are pink and opaque, about 3-5 minutes.

Serving

    Plate the Dish

    To serve, spoon a generous portion of cheese grits onto each plate. Top with the sautéed shrimp and sprinkle the cooked sausage on top. Enjoy your Shrimp & Grits!
