Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler, stirring occasionally until smooth. Once melted, remove from heat and let it cool slightly.

Prepare the Egg Mixture
In a separate bowl, separate the egg yolks from the whites. Add the granulated sugar to the egg yolks and whisk until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract.

Whip the Cream
In another bowl, whip 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until well combined.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Whip the Cream
In a chilled bowl, whip 100 ml of heavy cream with the powdered sugar and vanilla extract until soft peaks form.

Serve the Mousse
Once the mousse is set, top each serving with a dollop of whipped cream. Optionally, garnish with chocolate shavings or fresh berries.
