Prepare the Dates
Using a sharp knife, make a small slit in each Medjool date and gently remove the pit. Be careful not to cut all the way through.

Stuff the Dates
Take about 1/4 oz of goat cheese and stuff it inside each date, pressing gently to seal the opening.

Wrap with Bacon
Cut each bacon slice in half. Wrap each stuffed date with a half slice of bacon and secure it with a toothpick.
Balsamic Reduction

Prepare the Balsamic Reduction
In a small saucepan, combine 1 cup of balsamic vinegar and 2 tablespoons of honey. Bring to a simmer over medium heat.

Reduce the Mixture
Let the mixture simmer for about 15-20 minutes, stirring occasionally, until it has thickened and reduced by half. Remove from heat and let it cool slightly.
Cooking the Bacon-Wrapped Dates

Preheat the Oven
Preheat your oven to 400°F (200°C).

Arrange on Baking Sheet
Place the bacon-wrapped dates on a baking sheet lined with parchment paper, making sure they are not touching each other.

Bake
Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the dates are heated through. Flip them halfway for even cooking.

Serve
Remove from the oven and let cool for a few minutes. Drizzle with the balsamic reduction and garnish with chopped fresh parsley if desired.
