Garlic-Truffle Aioli

    Marinate the Steak

    In a bowl, whisk together olive oil, soy sauce, minced garlic, chopped rosemary, salt, and black pepper. Add skirt steak, ensuring it's well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare the Fries

    Peel and cut the russet potatoes into thick strips. Soak in cold water for at least 30 minutes to remove excess starch. Drain and dry well.

    Make the Aioli

    In a small bowl, combine mayonnaise, minced garlic, truffle oil, lemon juice, and salt. Mix well and refrigerate until ready to serve.

    Cook the Fries

    In a deep pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels, then season with salt.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove skirt steak from marinade and grill for about 4-5 minutes on each side for medium-rare, or cook to your desired doneness. Let rest for 5 minutes, then slice against the grain.
