Prepare the Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

Combine Wet and Dry
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in grated carrots and chopped walnuts.

Bake
Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool
Remove from oven and allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Prepare Cream Cheese Frosting
In a bowl, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.

Frost the Cake
Once the cakes are completely cool, spread frosting between the layers and on top of the cake.

Make Citrus-Honey Drizzle
In a small saucepan, combine honey, orange juice, lemon juice, and orange zest. Heat gently until warm and well combined.

Drizzle the citrus-honey mixture over the frosted cake and garnish with fresh mint leaves.
