    Prepare the Garlic Mashed Potatoes

    Add minced garlic, butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy. Set aside and keep warm.

    Cook the Beef Tenderloin

    Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the beef for about 3-4 minutes on each side for medium-rare. Remove from skillet and let rest.

    Prepare Broccolini

    In the same skillet, add the broccolini and a splash of water. Cover and steam for about 5 minutes until tender. Season with salt and pepper.

    Make the Cognac-Peppercorn Sauce

    In the skillet, add cognac and scrape up any browned bits. Stir in crushed peppercorns and simmer for 2 minutes. Drizzle over the beef tenderloin.

    Plate the Dish

    On a plate, serve the garlic mashed potatoes, top with the beef tenderloin, add broccolini on the side, and drizzle with the cognac-peppercorn sauce. Finish with a dollop of herb butter on top of the beef.
