Method

Short Rib Preparation

    Sear the Short Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper. In a large Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.

    Cook the Vegetables

    In the same pot, add chopped onion, minced garlic, and chopped carrots. Sauté until onions are translucent.

    Deglaze and Braise

    Pour in the red wine, scraping up any brown bits from the bottom. Add beef stock, thyme, and bay leaves. Return the short ribs to the pot. Bring to a simmer, cover, and transfer to the oven. Cook for 3 hours or until tender.

Garlic Mashed Potatoes

    Boil the Potatoes

    In a large pot, add cubed potatoes and peeled garlic cloves. Cover with water and bring to a boil. Cook until potatoes are tender, about 15-20 minutes.

    Mash and Season

    Drain the potatoes and garlic, then return to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Baby Carrots

    Cook the Carrots

    In a skillet, melt butter over medium heat. Add baby carrots, honey, salt, and pepper. Sauté for about 10-12 minutes until tender and glazed.

Pearl Onions

    Sauté the Onions

    In a small skillet, melt butter over medium heat. Add pearl onions, salt, and pepper. Cook until tender and browned, about 8-10 minutes.

Red Wine Demi

    Prepare the Sauce

    In a saucepan, combine red wine and beef stock. Bring to a boil, then reduce heat and simmer until reduced by half. Stir in butter, and season with salt and pepper to taste.
