1. Cook the Pasta
In a large pot, bring salted water to a boil. Add cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.
2. Cook the Sausage and Shrimp
In a large skillet over medium heat, add sliced Andouille sausage and cook until browned. Add the shrimp and cook until they turn pink. Remove from heat and set aside.
3. Make the Cheese Sauce
In the same skillet, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, stirring continuously until the mixture thickens. Add in the Cheddar and Pepper Jack cheeses, cayenne pepper, paprika, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.
4. Combine Everything
Add the cooked pasta, sausage, and shrimp to the cheese sauce. Mix well to ensure all ingredients are evenly coated with the sauce.
5. Serve
Serve hot, garnished with chopped green onions on top.
