Prepare the Grits
In a medium saucepan, bring water or chicken broth to a boil. Add salt, then gradually whisk in the heirloom grits. Reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally, until the grits are creamy and tender.

Cook the Mushrooms and Tasso Ham
While the grits are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes. Add diced tasso ham and Worcestershire sauce, stirring to combine. Cook for an additional 3-4 minutes until the ham is heated through. Remove from heat and set aside.

Cook the Shrimp
In the same skillet, add the remaining tablespoon of olive oil. Add the wild Gulf shrimp and season with black pepper. Cook for 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat.
