    Prepare the Potatoes

    Boil the russet potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly, then peel and mash them in a large bowl.

    Cook the Bacon

    In a skillet, cook the bacon until crispy. Remove from the skillet, chop into small pieces, and set aside.

    Make the Beer Cheese

    In a saucepan, melt butter over medium heat. Add flour, whisking to form a roux. Gradually stir in milk and beer, and cook until thickened. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper.

    Combine Ingredients

    In the bowl with the mashed potatoes, mix in the cooked bacon, pickled red onion, and beer cheese. Adjust seasoning with salt and pepper to taste.

    Form the Croquettes

    Shape the potato mixture into small balls or patties. Dip each croquette into beaten eggs, then roll in bread crumbs to coat.

    Fry the Croquettes

    Heat oil in a deep pan over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
