    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick slices (about 1/4 to 1/2 inch thick) and then cut those slices into fries.

    Soak the Fries

    Place the cut fries into a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes them crispier.

    Preheat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Remove the fries from the water and pat them dry with a towel. Fry the potatoes in batches until they are golden brown, about 5-7 minutes. Do not overcrowd the fryer.

    Drain and Season

    Remove the fries from the oil and drain them on paper towels. While they are still hot, sprinkle with salt and black pepper to taste.
