Prepare the Fries
Peel and cut the potatoes into fry shapes. Rinse them in cold water to remove excess starch, then dry thoroughly.

Fry the Potatoes
Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Prepare the Pulled Pork
If using pre-cooked pulled pork, heat it in a skillet with guajillo chili powder until warmed through. If you need to cook the pork, season and slow-cook it first until tender, then shred.

Assemble the Chilaquiles
In a large serving dish, layer the hand-cut fries. Top with pulled pork, cheese curds, and slices of avocado.

Add Toppings
Drizzle crema over the top and garnish with chopped cilantro. Squeeze fresh lime juice over everything before serving.
