Prepare the Cauliflower Wings
Preheat oven to 450°F (230°C). Cut the cauliflower into bite-sized florets. In a bowl, whisk together the flour, water, buffalo seasoning, salt, and pepper until smooth. Dip each cauliflower floret into the batter, allowing excess to drip off.

Bake the Wings
Place the battered cauliflower on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 25-30 minutes, or until golden and crispy, flipping halfway through.

Make the Herb Aioli
In a small bowl, mix the mayonnaise, garlic powder, fresh herbs, salt, and black pepper until well combined. Adjust seasoning to taste.

Toss Wings in Buffalo Sauce
Once the cauliflower wings are done baking, toss them in the buffalo sauce until fully coated.

Serve the buffalo cauliflower wings with pickled onions, sliced cucumbers, and herb aioli on the side.
