    Prepare the Garlic Mashed Potatoes

    Peel and chop the garlic and potatoes. Boil the potatoes in salted water until tender. Drain and return to the pot, add butter and cream, and mash until smooth. Stir in the garlic and season with salt and pepper to taste.

    Cook the Pork Belly

    Preheat the oven to 300°F (150°C). Season the pork belly with salt and pepper, then place in a baking dish. Cover with foil and bake for 2-3 hours until tender. Remove the foil and increase the temperature to 400°F (200°C) for the last 30 minutes to crisp the skin.

    Sauté the Fennel and Brussels Sprouts

    Slice the fennel and halve the Brussels sprouts. Heat olive oil in a skillet over medium heat. Add the fennel and Brussels sprouts, season with salt, pepper, and thyme, and sauté until tender and caramelized, about 10-15 minutes.

    Cook the Chicken

    Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium-high heat. Sear the chicken for 5-7 minutes on each side until cooked through and golden brown.

    Serve

    On each plate, place a scoop of garlic mashed potatoes, top with the sautéed fennel and Brussels sprouts, and a piece of chicken. Garnish with crispy pork belly on the side.
