Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash and dice the potatoes into small cubes. In a mixing bowl, toss the diced potatoes with olive oil, rosemary, salt, and black pepper. Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy.

Cook the Steak
Season the flat iron steak with salt and black pepper. In the same skillet used for the onions (add more oil if needed), heat over high heat until hot. Sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing.

Fry the Eggs
In the same skillet, reduce the heat to medium-low and add a tablespoon of butter. Crack the eggs into the skillet and fry to your liking (sunny-side up, over-easy, etc.).
