Preparation of Potatoes

    Brunch Potatoes

    Preheat oven to 425°F (220°C). Cut potatoes into small cubes, toss with olive oil, paprika, garlic powder, and salt. Spread onto a baking sheet and roast for 25-30 minutes until crispy.

Béchamel Sauce

    Make Béchamel

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk, whisking continuously until the sauce thickens. Stir in nutmeg, salt, and pepper.

Assembly and Cooking

    Assemble Croque Madame

    In a skillet, cook bacon until crispy. Set aside. In the same skillet, toast brioche slices on both sides until golden. On each slice, layer ham, a generous amount of béchamel, and Gruyère cheese. Top with another slice of brioche.

    In a separate pan, fry eggs sunny side up to your preference.

    Finish Croque Madame

    Return the sandwiches to the skillet, cooking until the cheese melts. Top each sandwich with a sunny-side-up egg and crispy bacon. Serve with roasted potatoes.
