Cheddar Jalapeño Biscuits

Prepare the Biscuit Dough
In a large bowl, whisk together flour, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cheddar cheese and jalapeño. Add milk and mix just until combined.

Bake the Biscuits
Preheat your oven to 425°F (220°C). Roll out the dough on a floured surface to about 1-inch thickness. Cut into rounds and place on a baking sheet. Bake for 15-20 minutes until golden brown.

Cook the Sausage
In a skillet over medium heat, cook the sausage until browned and crumbled. Drain excess fat.

Make the Gravy
Sprinkle flour over the sausage, stirring to combine. Gradually add milk, stirring continuously until the gravy thickens. Stir in smoked paprika, salt, and pepper to taste.

Prepare the Potatoes
In a large bowl, toss the diced potatoes with olive oil, salt, pepper, and garlic powder.

Spread the potatoes on a baking sheet and roast in the oven at 425°F (220°C) for 25-30 minutes, or until golden and crispy, stirring halfway through.

In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness. Season with salt and pepper.
