    In a large bowl, mix together kosher salt, brown sugar, black pepper, smoked paprika, garlic powder, and Cure #1.

    Apply the Cure

    Rub the mixture evenly over the pork belly, ensuring all surfaces are covered. Place the pork belly in a large resealable plastic bag or a non-reactive container.

    Refrigerate

    Seal the bag or cover the container and refrigerate for 7 to 10 days. Turn the pork belly every couple of days to ensure even curing.

    Rinse and Dry

    After the curing period, rinse the pork belly under cold water to remove excess salt and spices. Pat dry with paper towels.

    Age the Bacon

    Place the cured pork belly on a wire rack in the refrigerator and allow it to age for 2 to 3 weeks. This step allows the flavors to develop and enhances the texture.

    Prepare for Smoking

    Soak the wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 200°F (93°C).
