Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

    Chop the Vegetables

    While the pasta cooks, chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes. Mince the garlic.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the chopped zucchini and bell pepper, and cook for 3-4 minutes until they begin to soften. Add the cherry tomatoes and spinach, and cook for an additional 2-3 minutes until the spinach wilts.

Sauce Preparation

    Combine the Sauce

    Add the marinara sauce to the skillet with the cooked vegetables. Stir in the dried oregano, and season with salt and black pepper to taste. Allow the mixture to simmer for about 5 minutes to heat through.

Combine and Serve

    Mix Pasta and Sauce

    Add the drained pasta to the skillet and toss to combine with the sauce and vegetables. Cook for an additional 1-2 minutes until everything is well coated and heated through.

    Serve

    Plate the pasta and garnish with grated Parmesan cheese and fresh basil leaves, if desired. Enjoy your Vegetarian Pasta!
