Chicken Marinade Preparation

1. Marinate the Chicken

In a large bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and chopped rosemary. Mix well to create a marinade. Add the Jidori chicken breasts to the marinade, ensuring they are coated evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for better flavor).

Cooking the Chicken

2. Grill the Chicken

Preheat your grill or grill pan over medium-high heat. Remove the marinated chicken breasts from the refrigerator and discard the marinade. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Once done, remove from the grill and let rest for 5 minutes before slicing.

Assembling the Club Sandwich

3. Prepare the Bread

Toast the whole grain bread slices until golden brown. You can use a toaster or grill them on the griddle.

4. Layer the Ingredients

Spread mayonnaise on one side of each slice of toasted bread. On four slices, layer the grilled chicken slices, followed by bacon strips, Romaine lettuce, tomato slices, and avocado slices. Top with the remaining four slices of bread, mayonnaise side down.
