Blue Cheese Dressing

Prepare the Beef Tips

    Season the Beef

    In a medium bowl, toss the beef sirloin tips with blackening seasoning until evenly coated.

    Cook the Beef

    Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned beef tips and cook for 3-4 minutes until browned and cooked to your desired doneness. Remove from heat and let rest.

Cook the Bacon

    Crisp the Bacon

    In a separate pan, cook the bacon slices over medium heat until crispy. Remove from the pan and place on paper towels to drain excess grease. Once cooled, crumble into pieces.

Prepare the Salad

    Chop the Vegetables

    Slice the cherry tomatoes in half, thinly slice the red onion, and peel and slice the cucumber.

    Combine Salad Ingredients

    In a large salad bowl, add the mixed greens, halved cherry tomatoes, sliced red onion, sliced cucumber, and crumbled bacon.

Make the Blue Cheese Dressing

    Combine Dressing Ingredients

    In a bowl, mix together blue cheese, mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper. Adjust seasoning to taste and blend until creamy.

Assemble the Salad

    Add Beef and Dressing

    Slice the rested beef tips and place them on top of the salad. Drizzle with blue cheese dressing and toss gently to combine.

    Serve

    Serve immediately while the beef is warm and the salad is fresh.
