For the Shrimp and Andouille Sausage

    Cook the Sausage

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced andouille sausage and sauté until browned, about 5 minutes.

    Sauté the Shrimp

    Add the minced garlic to the skillet and sauté for an additional minute. Then, add the shrimp, Cajun seasoning, salt, and black pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes.

    Make the Cream Sauce

    Pour in the heavy cream and bring to a simmer. Let it cook for 2-3 minutes until slightly thickened. Stir in the chopped green onions before removing from heat.

For the White Cheddar Grits

    Boil Water

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt.

    Cook the Grits

    Slowly whisk in the grits and reduce the heat to low. Cook, stirring frequently, for about 20-25 minutes until the grits are thick and creamy.

    Add Cheese and Butter

    Stir in the shredded white cheddar cheese and butter until melted and creamy. Adjust salt to taste.

For the Side Salad

    Prepare the Salad

    In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber.

    Dress the Salad

    In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper. Drizzle over the salad and toss to combine.
