Pork Loin Steak

Sun-Dried Tomato Butter

Method

Prepare the Pork

    Season the Pork

    Rub the pork loin steaks with olive oil, salt, black pepper, garlic powder, and fresh rosemary. Ensure that the pork is evenly coated.

    Sear the Pork

    Heat a skillet over medium-high heat. Add a tablespoon of olive oil. Once hot, sear the pork loin steaks for 4-5 minutes on each side, or until they develop a golden-brown crust. Remove from the skillet and set aside.

    Roast the Pork

    Transfer the seared pork loin steaks to a preheated oven at 400°F (200°C) and roast for 15-20 minutes or until the internal temperature reaches 145°F (63°C). Let rest for 5 minutes before slicing.

Make the Sun-Dried Tomato Butter

    Prepare the Butter

    In a mixing bowl, combine the softened unsalted butter, chopped sun-dried tomatoes, minced garlic, fresh basil, salt, and black pepper. Mix until well combined.

    Chill the Butter

    Transfer the mixture to a piece of plastic wrap, shape it into a log, and refrigerate until firm, about 30 minutes.

Prepare the Spinach Salad

    Mix the Salad

    In a large bowl, combine fresh spinach, crumbled goat cheese, olive oil, balsamic vinegar, salt, and black pepper. Toss gently to combine all ingredients.

Plate the Dish

    Serve

    On a large plate, create a bed of the spinach salad. Slice the roasted pork loin steaks and place them on top of the salad. Finish by placing a slice of sun-dried tomato butter on top of each pork loin steak.
