For the Pounded Pork Cutlet

Prepare the Pork
Place pork loin chops between two sheets of plastic wrap. Use a meat mallet to pound the pork until about 1/2 inch thick.

Bread the Pork
Dredge each pounded pork chop in flour, shaking off excess. Dip into the egg mixture, then coat with breadcrumbs, pressing gently to adhere.

Cook the Cutlets
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded pork cutlets and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Melt the Butter
In a saucepan over medium heat, melt the unsalted butter until it begins to foam.

Finish the Sauce
Let the sauce simmer for another 2-3 minutes, then stir in the chopped parsley before removing from heat.
