Cooking Instructions

  1. 1

    Prepare the Lima Beans

Rinse the lima beans under cold water to remove any dirt or impurities. Check for any damaged beans and remove them.

  2. 2

    Soak the Beans

Place the rinsed lima beans in a large bowl and cover them with water. Allow them to soak for at least 8 hours or overnight to soften.

  3. 3

    Cook the Beans

After soaking, drain the beans and transfer them to a pot. Add 4 cups of fresh water and 1 tsp of salt. Bring to a boil over medium-high heat.

  4. 4

    Simmer the Beans

Once boiling, reduce the heat to low and cover the pot. Let the beans simmer for 30-40 minutes, or until tender. Stir occasionally and add more water if necessary to keep the beans submerged.

  5. 5

    Prepare the Seasoning

While the beans are cooking, finely chop the garlic and parsley. In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped garlic and sauté until fragrant, about 1-2 minutes.

  6. 6

    Combine and Serve

Once the lima beans are tender, drain any excess liquid and return them to the pot. Pour the sautéed garlic and olive oil over the beans, add black pepper to taste, and toss to combine. Garnish with fresh parsley before serving.
