Preheat Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Prepare Jalapenos
Wearing gloves, slice the jalapeno peppers in half lengthwise. Remove the seeds and membranes to reduce heat if desired.

Make Filling
In a mixing bowl, combine the cream cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well combined.

Stuff Jalapenos
Using a spoon or piping bag, fill each jalapeno half with the cheese mixture, ensuring they are generously filled.
Breading and Frying

Prepare Breading Station
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread Jalapenos
Dredge each stuffed jalapeno in flour, dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each piece is well coated.

Fry Jalapenos
Carefully place the breaded jalapenos in the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
