Make the Marinade
In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, Dijon mustard, honey, salt, black pepper, chopped thyme, and chopped rosemary. Whisk together until well combined.

Marinate the Chicken
Place the chicken breasts into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for best flavor.

Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing. This allows the juices to redistribute and ensures a moist chicken.
