To Prepare the Tartar Sauce

    Make the Tartar Sauce

    In a medium bowl, combine the mayonnaise, finely chopped pickles, capers, lemon juice, dijon mustard, salt, and black pepper. Mix well until all ingredients are thoroughly combined. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

To Prepare the Fish Sandwich

    Prepare the Fish Fillets

    In a shallow dish, beat the egg with the milk and season with salt and black pepper. In another shallow dish, combine the all-purpose flour and cornmeal. Dip each fish fillet into the egg mixture, then dredge in the flour and cornmeal mixture, ensuring an even coating.

    Grill the Fish

    Heat olive oil in a grill pan or outdoor grill over medium-high heat. Once the oil is hot, add the coated fish fillets. Grill for about 4-5 minutes on each side, or until the fish is cooked through and golden brown. Remove from heat and let rest briefly.

    Assemble the Sandwich

    Toast the hamburger buns on the grill for about 1-2 minutes until lightly golden. On the bottom half of each bun, place a leaf of leafy greens, followed by a grilled fish fillet, a slice of tomato, and a generous spoonful of the house-made tartar sauce. Top with the other half of the bun.
