Marinating Chicken

Prepare the Marinade
In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well blended.

Marinate the Chicken
Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Grilling Chicken

Preheat the Grill
Preheat your grill to medium-high heat (about 375-450°F / 190-232°C).

Cook the Chicken
Remove the chicken from the marinade and discard the remaining marinade. Place the chicken breasts on the grill. Grill for 6-8 minutes on one side, then flip and cook for an additional 6-8 minutes or until the internal temperature reaches 165°F (74°C).

Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

Prepare the Asparagus
While the chicken is grilling, toss the asparagus with olive oil, salt, and pepper. Set aside.

Prepare the Baby Potatoes
Boil the halved baby potatoes in salted water for about 10-15 minutes, or until tender. Drain and toss with olive oil, salt, and pepper.

Slice the grilled chicken and arrange it on a plate. Serve alongside the grilled asparagus and seasoned baby potatoes.
