Method
Marinate the Chicken

Combine Marinade Ingredients
In a large bowl, mix the buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and black pepper.

Marinate Chicken
Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare for Frying

In a shallow bowl, combine the all-purpose flour, cornstarch, cayenne pepper, and salt.

Heat Oil
In a deep pan or fryer, heat oil to 175°C (350°F) for frying the chicken.
Fry the Chicken

Bread the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the breading mixture, shaking off any excess.

Carefully place the breaded chicken thighs in the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 75°C (165°F).

Once cooked, transfer the chicken to a wire rack or paper towels to drain excess oil.

Remove the saucepan from heat and dip each fried chicken piece into the sauce to coat evenly.
Assemble the Sandwich

Toast the burger buns lightly if desired.

Place a piece of the hot and sticky chicken on the bottom half of the bun. Top with pickles and coleslaw if using. Cover with the top half of the bun.
