Prepare the Pork
Trim any excess fat from the pork loin and slice it into 1/2-inch thick pieces.

Bread the Pork
Dredge each pork slice in flour, dip it into the beaten eggs, and finally coat it with bread crumbs, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Pork
Carefully place the breaded pork slices into the hot oil, frying in batches for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Buns
Toast the buns lightly in the same skillet for about 1-2 minutes until golden brown.

Assemble the Sandwich
Spread mayonnaise on the bottom half of each bun. Place a fried pork slice on top, followed by a lettuce leaf and a slice of tomato. Top with the other half of the bun.

Serve the fried pork sandwiches immediately with your choice of sides.
