Chocolate Dipped Strawberries

Chocolate Dipped Strawberries

    Prepare the Strawberries

    Wash the strawberries under cold water and pat them dry with a paper towel.

    Melt the Chocolate

    In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

    Dip the Strawberries

    Hold each strawberry by the stem and dip it into the melted chocolate, ensuring it's fully coated. Allow excess chocolate to drip off.

    Set the Strawberries

    Place the dipped strawberries on a parchment-lined tray and refrigerate for at least 30 minutes until the chocolate sets.

Mini Cheesecakes

    Prepare the Crust

    In a bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of a muffin tin to form the crust.

    Make the Filling

    In a mixing bowl, beat the cream cheese until smooth. Add granulated sugar, vanilla extract, and egg. Mix until well combined and creamy.

    Fill the Crusts

    Pour the cheesecake filling over the prepared crusts in the muffin tin, filling each about 3/4 full.

    Preheat the oven to 325°F (163°C). Bake the mini cheesecakes for about 18-20 minutes or until set. Let cool completely.

    Once cooled, top each cheesecake with fresh berries before serving.

    Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
