Roasted Garlic Parmesan Sauce

Preparation

    Roasting Garlic

    Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast in the oven for 30-35 minutes until soft.

    Chicken Preparation

    While the garlic is roasting, season the chicken breasts with salt and pepper. Heat some olive oil in a skillet over medium-high heat and sear the chicken breasts on both sides until golden brown. Remove from skillet and set aside.

    Sautéing Vegetables

    In the same skillet, add chopped onions and cook until translucent. Then add sliced mushrooms and cook until softened. Finally, add the spinach and cook until wilted.

    Preparing Ham

    Chop the smoked ham into small pieces and add it to the skillet with the vegetables. Stir to combine and heat through.

Making the Sauce

    Blending the Sauce

    Once the garlic is roasted, squeeze the cloves out of their skins into a blender. Add heavy cream, Parmesan cheese, salt, black pepper, and dried thyme. Blend until smooth.

    Heating the Sauce

    Pour the blended sauce back into the skillet and bring to a simmer. Add the sautéed chicken breasts back into the skillet and coat them in the sauce.

Serving

    Plating the Dish

    Serve the chicken florentine over a bed of cooked rice or alongside mashed potatoes. Spoon additional sauce over the top and garnish with extra Parmesan cheese if desired.
