Preparing the Burger Patties

Make the Patties
In a large bowl, combine the ground buffalo meat, salt, black pepper, and garlic powder. Mix until evenly combined, then form into 4 equal-sized patties.
Making the Batter

Prepare the Batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, cold water, baking powder, and salt until smooth.
Frying the Patties

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Batter and Fry
Dip each patty into the batter to coat completely and carefully place it in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Burger

Toss in Hot Sauce
In a large bowl, toss the fried patties in the hot sauce until evenly coated.

Prepare the Buns
Slice the burger buns in half and toast them lightly if desired.

Assemble the Burger
On the bottom half of each bun, place a lettuce leaf, followed by a hot sauce-coated buffalo patty. Add slices of tomato, fried pickles, and drizzle with ranch or bleu cheese dressing. Top with the other half of the bun.
