Method

Preparing the Tilapia

  1. 1

    Marinate the Tilapia

In a bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Mix well. Add the tilapia fillets to the bowl and coat them evenly with the marinade. Let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. Ensure that the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Tilapia

Place the marinated tilapia fillets on the grill. Cook for about 4-5 minutes on each side, or until they are opaque and easily flake with a fork. Remove from the grill and set aside.

Making the Parmesan Sauce

  1. 4

    Melt the Butter

In a saucepan over medium heat, melt the butter until it is fully melted and bubbling.

  2. 5

    Create the Roux

Add the all-purpose flour to the melted butter. Whisk continuously for about 1-2 minutes until it turns a light golden color and forms a roux.

  3. 6

    Add Milk

Slowly pour in the milk while whisking to avoid lumps. Continue to cook, stirring constantly, until the mixture thickens and starts to bubble.

  4. 7

    Incorporate Parmesan

Lower the heat and stir in the grated aged Parmesan cheese, dried oregano, and dried basil. Mix until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.

Serving the Dish

  1. 8

    Plate the Tilapia

Place the grilled tilapia fillets on serving plates.

  2. 9

    Top with Sauce

Generously spoon the Parmesan sauce over each tilapia fillet.

  3. 10

    Garnish and Serve

Garnish with fresh herbs if desired, and serve immediately with your choice of side dishes.
