Boom Boom Shrimp

In a medium bowl, combine the shrimp with cornstarch and toss to coat evenly. This will give the shrimp a crispy texture when fried.

Set up a breading station: place the beaten egg in one bowl, and panko breadcrumbs in another bowl.

Bread the Shrimp
Dip each cornstarch-coated shrimp into the egg, then roll in the panko breadcrumbs, ensuring they are fully coated.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

Make the Boom Boom Sauce
In a small bowl, mix together mayonnaise, sweet chili sauce, and sriracha. Adjust sriracha to taste for desired spiciness.
