Prepare the Ingredients
Thinly slice the onions and set aside. If not already shaved, thinly slice the prime rib against the grain.

Sauté the Onions
In a large skillet, heat olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes.

Toast the Hoagie Rolls
While the beef and onions are heating, preheat your oven to 375°F (190°C). Place the hoagie rolls on a baking sheet and toast in the oven for about 5 minutes, or until they are lightly crispy.

Build the Sandwich
Remove the hoagie rolls from the oven. Fill each roll generously with the shaved prime rib and onion mixture. Top with slices of Jack cheese.

Melt the Cheese
Return the assembled sandwiches to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Prepare the Au Jus
In a small saucepan, heat the remaining beef broth over low heat until warmed through, to serve as au jus.

Serve the sandwiches hot with a small bowl of au jus for dipping.
