Boil the Pasta
In a large pot, bring salted water to a boil. Add 8 cups of pasta and cook according to package instructions until al dente. Once cooked, drain and set aside.

Season and Cook Chicken
While the pasta is cooking, season 2 pieces of chicken breasts with 1 tsp of salt and 1 tsp of black pepper. In a skillet, heat 2 tbs of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until cooked through and golden brown. Remove from the skillet, let rest for a few minutes, and then slice.
Make Pesto Sauce

Blend Pesto Ingredients
In a food processor, combine 2 cups of fresh basil leaves, 1 tbs of pine nuts, 3 cloves of garlic, and 1 cup of grated Parmesan cheese. Pulse until finely chopped. With the processor running, gradually add 1 cup of olive oil until the mixture is smooth. Season with 1 tsp of salt.
Combine and Serve

Mix Everything Together
In a large mixing bowl, combine the drained pasta, sliced chicken, and pesto sauce. Toss until well coated.

Garnish and Serve
Serve the pasta in individual bowls. Top with halved cherry tomatoes, additional fresh basil leaves, and a sprinkle of grated Parmesan cheese.
