Prepare the Ingredients
Peel and dice the Russet potatoes into small cubes. Chop the onion finely and mince the garlic cloves.

Cook the Bacon
In a large pot, cook the bacon slices over medium heat until crispy. Remove from pot, crumble, and set aside. Leave the bacon grease in the pot.
Cooking the Soup

Add Potatoes and Broth
Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes, or until the potatoes are tender.

Blend the Soup
Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a standard blender.

Add Cream and Seasoning
Stir in the heavy cream, salt, black pepper, and paprika. Let the soup simmer for an additional 5 minutes.
