Method

Preparation

  1. 1

    Prepare the Ingredients

Peel and dice the Russet potatoes into small cubes. Chop the onion finely and mince the garlic cloves.

  2. 2

    Cook the Bacon

In a large pot, cook the bacon slices over medium heat until crispy. Remove from pot, crumble, and set aside. Leave the bacon grease in the pot.

Cooking the Soup

  1. 3

    Sauté the Aromatics

In the same pot with the bacon grease, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.

  2. 4

    Add Potatoes and Broth

Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes, or until the potatoes are tender.

  3. 5

    Blend the Soup

Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a standard blender.

  4. 6

    Add Cream and Seasoning

Stir in the heavy cream, salt, black pepper, and paprika. Let the soup simmer for an additional 5 minutes.

Serving

  1. 7

    Serve the Soup

Ladle the soup into bowls. Top with crumbled bacon, shredded cheddar cheese, and chopped chives before serving.
