Preparing the Glaze

Make the Lime-Soy-Ginger Glaze
In a medium saucepan, combine soy sauce, lime juice, grated ginger, brown sugar, minced garlic, and red pepper flakes. Heat over medium heat until it begins to simmer.

Thicken the Glaze
Allow the mixture to simmer for about 5-7 minutes, stirring occasionally, until the glaze thickens slightly. Remove from heat and set aside.
Preparing the Salmon

Prepare the Grill
Soak the mesquite wood chips in water for at least 30 minutes to prevent them from burning quickly. Preheat your grill to medium-high heat.

Serve the Salmon
Remove the salmon from the grill and let it rest for a couple of minutes. Serve with additional lime-soy-ginger glaze on the side.
