Fritters Preparation

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Stir to mix well.

Incorporate Cheese and Jalapeños
Fold in the diced jalapeños, shredded cheddar cheese, and shredded Monterey Jack cheese into the batter until evenly distributed.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Fritters
Using a spoon or ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches for about 3-4 minutes or until golden brown, turning occasionally.

Drain and Top
Once golden brown, remove the fritters and drain on paper towels. While still hot, sprinkle with grated Parmesan cheese.

Mix Ingredients
In a small bowl, combine the mayonnaise, Greek yogurt, chopped parsley, chopped chives, garlic powder, lemon juice, salt, and black pepper.

Whisk Together
Whisk the mixture until smooth and well combined. Adjust seasoning to taste if needed.

Cover and refrigerate the dressing for at least 30 minutes to allow the flavors to meld.
