Marinade
Chicken
Method
Preparation of Marinade
- 1
Mix Marinade Ingredients
In a medium bowl, combine soy sauce, pineapple juice, brown sugar, minced garlic, grated ginger, and black pepper. Whisk the ingredients together until the sugar is dissolved and the mixture is well combined.
- 2
Marinate Chicken
Place the boneless chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.
Cooking Chicken
- 3
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).
- 4
Prepare Chicken for Grilling
Remove the chicken from the marinade and discard the marinade. Pat the chicken dry with paper towels to ensure a good sear on the grill.
- 5
Grill Chicken
Brush the grill grates with olive oil to prevent sticking. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- 6
Add Pineapple and Peppers
During the last 2-3 minutes of grilling, place the pineapple slices and sliced red bell pepper on the grill. Grill until the pineapple is caramelized and the peppers are tender, about 2-3 minutes.
Serving
- 7
Serve the Dish
Once cooked, remove the chicken and grilled vegetables from the grill. Let the chicken rest for a few minutes. Serve the chicken medallions topped with grilled pineapple and red bell pepper slices, garnished with chopped green onions.
