For the Queso

Prepare the Cheese Mixture
In a medium skillet over medium heat, combine the Monterey Jack cheese, cream cheese, and sour cream.

Add Diced Tomatoes
Stir in the can of diced tomatoes with green chilies and the Yucatan seasoning. Mix well until everything is melted and combined.

Season to Taste
Add salt to taste and stir in the fresh cilantro just before serving.
For the Fresh Salsa

Combine Ingredients
In a bowl, combine the diced tomatoes, red onion, jalapeño pepper, lime juice, and fresh cilantro.

Season and Mix
Add salt to taste and mix well. Let the salsa sit for at least 10 minutes to meld the flavors.
For the Tortilla Chips

Prepare the Tortillas
Cut the yellow corn tortillas into quarters to form triangles.

Fry the Chips
Heat oil in a deep skillet over medium-high heat. Fry the tortilla triangles in batches until golden brown and crispy, about 2-3 minutes per batch.

Drain and Season
Remove the chips and drain on paper towels. Season with salt while still warm.
