Grilling Chicken

Prepare the Chicken
Pat the chicken breasts dry with paper towels. In a small bowl, mix the olive oil, mesquite seasoning, salt, and black pepper. Rub this mixture all over the chicken breasts.

Grill the Chicken
Preheat the grill to medium-high heat. Once hot, place the chicken breasts on the grill. Cook for about 6-7 minutes on one side, then flip and grill for another 6-7 minutes or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
Assembling the Salad

Prepare the Salad Base
In a large salad bowl, add the fresh greens as the base.

Add Vegetables
Top the greens with the diced tomatoes, sliced cucumbers, and thinly sliced red onion.

Add Grilled Chicken
Slice the rested grilled chicken breasts and arrange them on top of the salad.

Finish with Croutons
Sprinkle the multi-grain croutons over the top of the salad for added crunch.
