Salsa Preparation

Chop the Vegetables
Dice the Roma tomatoes and place them in a mixing bowl. Finely chop the red onion and add it to the bowl. Remove the seeds from the jalapeño pepper for less heat, then finely chop it and add to the bowl as well.

Mix the Salsa
Gently stir all the ingredients together until well combined. Taste and adjust seasoning if necessary. Let the salsa sit for at least 30 minutes to allow flavors to meld.

Cut the Tortillas
Stack the yellow corn tortillas and cut them into triangles (like a pizza). You can use kitchen scissors or a sharp knife.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Chips
Carefully add a few tortilla triangles to the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side or until they are golden brown and crispy.

Drain and Season
Once fried, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt while they are still hot.
