Preparing the Spinach Filling

    Sauté the Onions and Garlic

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.

    Cook the Spinach

    Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

    Combine the Filling Ingredients

    In a mixing bowl, combine the sautéed spinach, ricotta cheese, crumbled feta cheese, nutmeg, salt, and black pepper. Mix until well combined.

Assembling the Filo Florentine

    Prepare the Filo Pastry

    Preheat your oven to 180°C (350°F). Grease a baking dish with melted butter. Take one sheet of filo pastry and brush it lightly with melted butter. Layer another sheet on top and brush again. Repeat until you have 6 layers.

    Add the Filling

    Place half of the spinach filling in the center of the layered filo pastry. Fold the edges of the pastry over the filling to create a parcel.

    Layer More Pastry

    Repeat the process with the remaining filo sheets (6 layers) and place it over the first parcel, tucking the edges in to seal it.

    Bake the Filo Florentine

    Brush the top of the assembled pastry with melted butter. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.

    Serve

    Remove from oven, allow to cool for a few minutes, then slice and serve warm, garnished with fresh herbs if desired.
