Prepare the Onions
Slice the medium onions thinly. Set aside.

Prepare the Prime Rib
If not already shaved, slice the prime rib into thin pieces. Season with salt and black pepper to taste.

Sauté the Onions
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.

Toast the Hoagie Rolls
While the meat is cooking, preheat your oven to 350°F (175°C). Place the hoagie rolls on a baking sheet and toast in the oven for about 5 minutes, or until lightly golden.

Assemble the Sandwiches
Remove the toasted hoagie rolls from the oven. Place a generous portion of the prime rib and onion mixture onto each roll. Top each sandwich with 2 slices of jack cheese.

Melt the Cheese
Return the assembled sandwiches to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Serving

Serve with Au Jus
Serve the sandwiches hot with a small bowl of au jus on the side for dipping.
