Preparation of Ingredients

Prepare the Chicken
Preheat your oven to 375°F (190°C). Rub the cooked chicken breast with olive oil, salt, black pepper, and garlic powder. Place in a baking dish and roast for 25-30 minutes or until heated through. Allow to cool and slice.

Cook the Bacon
In a large skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Drain on paper towels and crumble into pieces.

Prepare the Jicama and Fruits
Peel the jicama and cut it into thin matchsticks. Rinse and slice the strawberries. Rinse the blueberries and set aside.
Assembling the Salad

Combine the Greens
In a large salad bowl, add the mixed salad greens and cherry tomatoes.

Add Chicken and Toppings
Top the greens with sliced roasted chicken, crumbled bacon, matchstick jicama, cashews, sliced strawberries, and blueberries.
Making the Dressing

Mix the Dressing
In a small bowl, whisk together poppy seeds, honey, apple cider vinegar, olive oil, and season with salt and black pepper to taste.

Drizzle the dressing over the assembled salad and toss gently to combine.
